Madness, I tell you produce madness! Yes friends, it’s March already & the fresh savings are crazy around here! But you knew that already. I’ve seen Smart Shoppers smiling every day at the bright peaches, nectarines, plums & grapes; I’ve even seen a few of you jumping for joy at the green tag price (I originally assumed you were practicing your slam dunks, but I knew better! =))
Find fresh avocados, blueberries, and tomatoes at WinCo Foods.
I’ve also seen more of you near the apples (Braeburn, Red Delicous & Fuji), yellow onions, asparagus (some of you are even trying the white variety!). I can’t quite figure out if it’s the Extra Savings, or you’re trying out the Mediterranean — or is it the Dash Diet all of you are shopping for? Both of them are based on fresh fruits & vegetables, and include these items on their lists. Hmmm…I’ve got it! I just saw another okra (or ‘lady finger’) and a fresh avocado go straight from hands to the cart. Since it must be the Mediterranean diet, be sure to pick up a few Roma tomatoes & blueberries to try this delicious salsa recipe.

But wait! I just saw a brilliant purple eggplant picked up & headed to bulk foods with another Smart Shopper. Hidden Surprise Easter Egg Treats

Easter snacks featuring Rice Krispies

Notes: For best results, use fresh marshmallows.

1 jar (7 oz.) marshmallow crème can be substituted for marshmallows.

Diet, reduced calorie or tub margarine is not recommended.

Store no more than two days at room temperature in airtight container.

Prep Time: 20 minutes  
Total Time: 40 minutes
Servings: 12

Ingredients:
12 Plastic snap apart 3×2 in. Easter Eggs
3 tbsp butter or margarine
1 package (10 oz. about 40) regular marshmallows
OR
4 cups miniature marshmallows
6 cups Kellogg’s Rice Krispies cereal
1/2 c M&M’s Brand Chocolate Candies
Canned frosting or decorating gel (optional)

Directions:
1. Clean, then coat inside of plastic eggs with cooking spray. Set aside.
2. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
3. Add KELLOGG’S RICE KRISPIES cereal. Stir until well coated.
4. Using greased hands, firmly press 1/4 cup of the cereal mixture into each plastic egg half. Use fingers to make hollow center in each half. Remove from molds. Place on wax paper. Cool slightly.
5. Place about 6 M&M’S® Brand Chocolate Candies in one half of each egg. Gently press two halves of each egg together until they stick. Cool completely.
6. Decorate with frosting and additional M&M’S® Brand Chocolate Candies (if desired). Best if served the same day.

MICROWAVE DIRECTIONS: Follow step 1 above. In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 3 through 6 above. Microwave cooking times may vary.

Crunchy Cheese Chicken Tenders
Sunshine® Cheez-It® Original crackers combine with Parmesan cheese in the crispy coating on these chicken fingers. They’re great for lunch or as a snack during the big game.

Preparation Time: 15 Mins.
Total Time to Serve: 30 Mins.
Servings: 4

INGREDIENTS
1 1/2 pounds boneless, skinless chicken breast halves
1/4 cup all-purpose flour
2 egg whites, slightly beaten
1 tablespoon water
2 cups Sunshine® Cheez-It® Original Crackers (crushed to 1 1/3 cups)
1/2 cup grated Parmesan cheese
1 teaspoon dried oregano leaves
1/2 cup reduced-fat ranch salad dressing or spicy ranch salad dressing

DIRECTIONS
1. Lengthwise cut chicken into 3/4-inch-wide strips. Set aside.

2. Place flour on wax paper. In shallow dish stir together egg whites and water. In another shallow dish combine SUNSHINE CHEEZ-IT Original snack crackers, Parmesan cheese and oregano. 3. Roll chicken pieces, one at a time, in flour. Shake off excess flour. Dip into egg white mixture. Coat with cracker mixture, gently pressing onto chicken. Place in single layer in shallow baking pan coated with cooking spray or lined with foil. 4. Bake, uncovered, at 425°F for 15 to 20 minutes or until chicken is no longer pink. For food safety, internal temperature of the chicken should reach at least 165ºF. Serve with salad dressing as dipping sauce.

Homemade Almond Milk

Recipe for Homemade Almond Milk using Bulk ingredients from WinCo

Prep Time:

Cook Time:

7 Minutes (plus overnight soaking)

    Ingredients:

  • 1 Cup Almonds, WinCo Bulk Bin# 2037
  • 5 Cups Hot Water (not boiling hot, just hot to the touch)
  • 1/2 Tbsp Vanilla Extract
  • 1 Tbsp Honey

Method:

In a food processor, chop the almonds into large chunks. You can also do this on a cutting board – neatness does not matter.

In a large container (I used a gallon-sized freezer bag), combine the chopped almonds with the hot water. Refrigerate and let soak overnight.

Pour off the remaining liquid into a large pot.

Place the water-logged almonds back into the food processor. Process to as fine a mash as your gadget will allow.

Add the mashed almonds to the liquid in the large pot.

Add in the vanilla extract and honey. Heat over a medium heat about seven minutes – stirring occasionally.
Use a cheese cloth or tea towel to strain off the pulp. See photo below for example. I placed a tea towel over a tall glass (something with a wider mouth will work much better – use whatever you’ve got). I secured the tea towel in place using a rubber band. Then, slowly pour the heated almond concoction into the towel/cheese cloth. You can use a whisk to assist in getting the liquid to pass through the cloth.

Once all of your almond mixture is transferred to the cheese cloth, gather the edges and begin to wring out the remaining liquid. Twist in one direction til you think you have all the liquid, unwind and twist in the opposite direction. Do this several times until you are sure you have all the liquid.
Transfer to a container for storage in the refrigerator. Will keep for up to a week.

Prep Time: 10 minutes Cook Time: 25 minutes Serves: 4 as a side dish

    Ingredients:

  • 3 Chicken Breasts, cut into cubes
  • 1 ½ Cup Unsalted Peanuts, WinCo Bulk Bin #2019
  • 1 ½ Tbsp Olive Oil
  • 1/2 tsp Chili Pepper Flakes
  • 2 Cloves Garlic
  • 1/2 tsp sesame oil
  • 1 ½ tsp Curry Powder

Method:

Place cut chicken onto skewers.

In a food processor, combine peanuts and olive oil. Process until smooth.

Add spices to the peanut butter and process again to fully incorporate.

Using half of the sauce, spread the peanut sauce over the skewers.

Bake on a foil-lined baking sheet. 350° for 20-25 minutes. Turn over 10 minutes into cooking.

Serve hot, using the remaining peanut sauce for dipping.

FOR IMMEDIATE RELEASE - March 6, 2013 – Bumble Bee Foods, LLC, has issued a voluntary recall on specific codes of 5-ounce Chunk White Albacore and Chunk Light Tuna products. The recall has been issued because the products do not meet the company’s standards for seal tightness.

Loose seals or seams could result in product contamination by spoilage organisms or pathogens and lead to illness if consumed. There have been no reports to date of any illness associated with these products.

Bumble Bee Foods SVP of Technical Services and Corporate Quality Assurance Steve Mavity said: “Due to can integrity concerns, our top priority at this time is to remove these recalled products from distribution as soon as possible. We are working closely with our sales team and with retailers to help expedite the recall. We must assure our consumers and retailers of a safe and quality product so we very much appreciate everyone’s part in disposing of the products with the specific codes indicated.”

Mavity added, “There have been no consumer reports of illnesses attributed to these products, but because we’ve identified an issue with seal tightness, we’re voluntarily recalling products to ensure the highest margin of safety and quality.”

Consumers who have purchased the recalled products should discard the product by disposing in the garbage.

Orange Cream Chia Smoothie

Chia seeds available at WinCo Foods, in the bulk section.
Ingredients:
1 ½ cups of orange juice
1/2 banana (peeled)
2 Tablespoons plain or Greek yogurt
1 tablespoon chia seeds – Bulk Bin #1407 (in the bulk spice section)

Your Choice of:
1/2 cup mango (peeled) or
1/2 orange (peeled)

Directions:
In a cup or container, soak chia seeds for a about 10 minutes in orange juice, this will allow seeds to absorb juice and soften. Place juice, followed by all other ingredients in blender.
Blend until creamy. Do not let sit, enjoy after blending (seeds continue to absorb moisture and smoothie will thicken as it sits).

FOR IMMEDIATE RELEASE – SAN DIEGO – March 7, 2013 — Bumble Bee Foods, LLC, is expanding a voluntary recall on specific codes of 5-ounce Chunk White Albacore and Chunk Light Tuna products. The recall has been issued because the products do not meet the company’s standards for seal tightness.

Loose seals or seams could result in product contamination by spoilage organisms or pathogens and lead to illness if consumed. There have been no reports to date of any illness associated with these products.
Bumble Bee initially announced the voluntary recall on Wednesday, March 6 after identifying an issue on a manufacturing line, which has been corrected. The company’s final assessment of all products affected with the recall include the following products with “best by” and code dates:

KOOL-AID Tie-Dye Easter Eggs

Kool-Aid-Tye-Dye-Easter-Eggs-Step1
MIX contents of 2 (same-flavored) KOOL-AID envelopes with 2 Tbsp. water in 6- to 8-oz. container; stir to dissolve drink mixes. Repeat in 3 separate containers with remaining KOOL-AID envelopes.

PLACE eggs on cooling rack in sink; rinse eggs with tap water.

Kool-Aid-Tye-Dye-Easter-Eggs-Step3
SPOON KOOL-AID mixtures, 1 at a time, over wet eggs to create tie-dye patterns. Repeat with remaining eggs.

POUR a little tap water over each egg to set colors. Use tongs to transfer eggs to paper towel-covered baking sheet to dry. Rinse sink immediately as needed.

How to Make Solid-Colored Easter Eggs:
Pour contents of 1 envelope of each KOOL-AID color into separate 10- to-12 oz. container. Add 2/3 cup water to each; stir to dissolve drink mix. Use spoon to place 1 hard-cooked egg in each cup, keeping egg submerged until desired color is reached. Continue with remaining eggs. Let dry as directed above.

  • 2 envelopes (0.13 oz. to 0.23 oz. each) KOOL-AID Unsweetened Drink Mix, any yellow or green color (try Lemonade, Piña or Lemon-Lime flavor)
  • 2 envelopes (0.22 oz. each) KOOL-AID Unsweetened Drink Mix, any blue color (try Mixed Berry or Ice Blue Raspberry Lemonade flavor)
  • 1/2 cup water, divided
  • 1 – 1/2 doz. hard-cooked eggs, cooled

BOISE, Idaho, March 18, 2013 – WinCo Foods, LLC announced today that it will open its newest discount supermarket at 9:00 a.m. on Sunday, March 24th. The almost 98,000 square foot Pocatello store is located at 1030 Yellowstone Avenue and replaces the company’s much older 42,000 square foot store located on Pocatello Creek Road. The new store will employ approximately 210 individuals, 101 of whom transferred from the closed store joined by more than 100 new employee owners.

WinCo Foods is an employee owned discount food chain known primarily for being the supermarket low price leader in each market where it operates. Store Manager, Melissa L., transfers to the new store with nearly 22 years of experience with the company and over 11 years serving customers in Pocatello. The entire management team is enthusiastic about opening a new WinCo Foods store in Pocatello. Melissa indicated that the community has been waiting a very long time for a store like the new WinCo. She looks forward to working with all of the employees to provide a great customer experience for long time and new customers. The entire WinCo Foods team looks forward to serving the community with a large selection of grocery items and our low price approach to the market.

As customers enter the new store they’ll see the traditional “Wall of Values” featuring special low pricing on a wide variety of popular items. These cute bunny and chick cupcakes will keep the kids hopping at your spring party.

Prep Time: 35 Min
Start to Finish: 2 Hr 15 Min
Makes: 24 cupcakes

Cupcakes
1 box Betty Crocker® SuperMoist® yellow cake mix
Water, vegetable oil and eggs called for on cake mix box

Decorations
1 container Betty Crocker® Rich & Creamy vanilla or creamy white frosting
Red food color
Yellow food color
2 bags (6 oz each) assorted flavor stretchy and tangy taffy candies (strawberry, grape and banana)
6 large orange gumdrops
48 purple candy-coated chocolate candies
48 miniature chocolate chips

1. Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups. Make and bake cake mix as directed on box for 24 cupcakes. Cool in pans 10 minutes. Remove from pans to cooling rack. Cool completely, about 30 minutes.

2. Meanwhile, divide frosting between 2 small bowls, about 1 1/4 cups each. Mix 7 drops red food color into one bowl, yellow into the other.

3. Remove paper baking cups from cupcakes. Place upside down on serving platter.

4. To make bunny cupcakes: Frost 12 cupcakes with the pink frosting. Cut shapes out of strawberry taffy candies for ears, feet and tail. Cut shapes out of grape taffy candy for ears and nose. Make ears by stacking grape candy on top of pink candy. Trim to shape into bunny ears if necessary. Press firmly into cupcake. Slide strawberry taffy cutouts under cupcake to make feet. Make small ball out of taffy and press onto back of bunny cupcake for tail. Add small nose. Gently press chocolate candy on face and use frosting to place miniature chocolate chips on chocolate candy for eyes.

5. To make chick cupcakes: Frost 12 cupcakes with yellow frosting. Cut shapes out of banana taffy candies for beaks and feet. Cut shapes out of orange gumdrops for wings and comb. Press orange gumdrops firmly into cupcake. Slide banana taffy cutouts under cupcake to make feet. Add beak. Gently press miniature chocolate chips on face for eyes.

Hop to it and make this sweet and silly bunny butt cake for your spring party.

Prep Time: 40 Min
Start to Finish: 3 Hr 40 Min

Ingredients:
1 box Betty Crocker® SuperMoist® yellow or white cake mix
Water, vegetable oil and eggs called for on cake mix box
Tray or cardboard covered with wrapping paper and plastic food wrap or foil
1 container Betty Crocker® Rich & Creamy vanilla frosting
Red food color
1 large marshmallow, cut in half
3 cups shredded coconut
Green food color
2 strawberry or cherry stretchy and tangy taffy candies (from 6-oz bag)
1 roll Betty Crocker® Fruit Roll-Ups® punch berry chewy fruit snack (from 5-oz box)
3 green-colored sour candies, separated into strips
Construction paper

1. Heat oven to 325°F. Grease 1 1/2-quart ovenproof bowl (8 inches across top) with shortening; coat with flour (do not use cooking spray). Lightly grease 3 muffin cups in regular-size muffin pan.

2. Make cake batter as directed on box. Pour cake batter in 3 muffin cups, filling two-thirds full. Pour remaining batter into 1 1/2-quart bowl.

3. Bake cupcakes 17 to 21 minutes, bowl 47 to 53 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove cakes from muffin cups and bowl; place rounded sides up on cooling racks. Cool completely, about 1 hour. If necessary, cut off rounded tops of cakes.

4. Spoon frosting into large bowl. Add red food color to make desired pink color. Place bowl cake on tray cut side down; spread 1/3 cup frosting over cake. Use frosting to adhere cupcakes to bowl cake for feet and bunny tail. Use toothpicks if necessary. Place marshmallow halves, cut sides down, on tops of 2 cupcakes to make heels of feet. Spread thin layer of frosting over side and top of cake to seal in crumbs. Freeze cake 30 to 45 minutes to set frosting.

5. Spread remaining frosting over cake. Sprinkle with 2 cups of the coconut; press gently to adhere. Shake 1 cup coconut and 3 drops green food color in tightly covered jar until evenly tinted. Surround bunny with tinted coconut. Use rolling pin to press strawberry candies into 2 large rectangles. Cut 2 large ovals and 6 small circles out of candy. Press onto bottoms of bunny feet, using frosting if needed.

6. Roll up fruit snack to make carrot shapes. Cut green sour candies in half crosswise; press into large end of each carrot to make greens on carrot. Cut ears from construction paper; wrap ends that will be inserted into cake with plastic food wrap. Insert into cake. Remove ears, plastic wrap and toothpicks before serving. Store loosely covered.

Asian Grilled Chicken Salad

2 tablespoons sesame oil
2 tablespoons rice vinegar
2 tablespoons soy sauce
1 tablespoon sugar
1 tablespoon minced ginger
1 tablespoon lime juice
Pinch of crushed red pepper
1 pound boneless, skinless chicken breasts
1 pkg. (12 oz.) DOLE® Very Veggie® or other DOLE salad blend
Thai Peanut Dressing (recipe below)
Chopped peanuts (optional)
Sliced green onions (optional)

Combine sesame oil, vinegar, soy sauce, sugar, ginger, lime juice and red pepper in shallow non-metallic dish. Add chicken; turn to coat both sides with marinade. Cover; marinate 30 minutes in refrigerator.

Remove chicken; discard marinade. Grill chicken over medium-high heat 8 minutes. Turn chicken over and cook 8 to 10 minutes longer or until chicken is no longer pink in center, brushing with additional sesame oil, if necessary. Let stand 5 minutes before cutting into thin slices.

Toss salad with Thai Peanut Dressing, to taste in large bowl. Divide equally on 4 large plates. Arrange sliced chicken on top of each. Garnish with peanuts and green onions, if desired.

Thai Peanut Dressing: Whisk together 1/4 cup each reduced fat peanut butter, soy sauce, rice vinegar and lime juice. Add a pinch of each crushed red pepper and ground ginger and whisk until blended. Makes 1 cup.

Variation: Salad mixture and chicken can be rolled-up in warmed flour tortillas and served with additional Thai Peanut Dressing for a dipping sauce.
